Ok, so I told you I love ginger, right? Well, I want to share a delicious ginger cookie recipe with you. I have modified it a bit to include more ginger spice and less sugar and butter. It’s quick, easy, and my kids love them too!
Here’s what you need to know:
Makes about 3 dozen 2 inch cookies
- 2 1/4 cups flour
- 2 tsp ground ginger
- 1tsp baking soda
- 3/4 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup (1 stick) butter, softened
- 3/4 cup sugar
- 1 egg
- 1tbsp ginger tea* (or water if preferred)
- 1/4 cup molasses
- 2 tbsp. sugar for rolling cookies
Heat oven to 350 dgrees
Combine flour, ginger, baking soda, cinnamon, cloves, and salt in a medium sized bowl.
In a large bowl cream together butter and sugar. Beat in egg. Stir in tea9or water) and molasses. Then add the dry ingredients to wet ingredients. Shape into tsp sized balls and roll in sugar. Place on parchment paper lined cookie sheet and flatten slightly. Bake 8-10 mins.
*Ginger tea can be made by boiling thinly sliced peeled ginger root in water for 10-15 mins. Water can be substituted but the tea will give the cookies a spicier gingery taste.
